How to Prepare Wild Rice PilafYes, BBQ is mostly about meat. However, meat can be boring on its
own and not everyone (vegetarians, for example) may appreciate it. For this purpose, you can think of some side dishes to accompany your
meat that will it more appealing and healthier.
Many dishes can be prepared on your grill: from fruits, to root crops, to vegetables and even grains.
Just make sure you have foil pans and foil wraps to your disposal, and you will be all set.
Here are a couple of suggestions for your next BBQ food; they are healthy, elegant and do not
need too much preparation:
Wild Rice Pilaf
One may think that this is a complicated dish to do. Yes, you will need to sauté some ingredients for this dish, but not to worry if you plan
to cook outdoors; sautéing can be done at home in advance, or even the night before your picnic.
While at home, you can prepare the mushrooms for the pilaf. Grease the pan with olive oil or butter and sauté a cup of mushrooms on
medium-high heat.
On an 8”x12” foil pan, put the mushrooms and cover them with approximately two cups boiling water. Incorporate 1/4 cup dry white wine and add
1 cup of rice. For this dish, you should ideally use ½ cup brown rice and ½ cup wild rice.
If wild rice is not available, you can use ½ cup white rice as substitute or just use the brown rice.
Then on a chopping board, chop ½ onion, ½ yellow bell pepper and two tomatoes (preferably ripe). Add these to the rice and mushroom mixture
and season with one teaspoon salt, 1/4 teaspoon ground pepper and ½ teaspoon cumin.
To distribute the flavor, stir together the ingredients in the pan and seal with aluminum foil.
Now the dish is ready for the grill. Place the pan on the grill and cook for half an hour. Then check the dish and stir the ingredients again,
so the flavor will be dispersed and the pilaf will cook evenly. You do not want to burn some parts of the dish and have other parts raw.
Reseal the pan with tin foil and let it cook for 30 minutes more. Remember, though, to check on the dish occasionally as it may cook faster
than expected, especially if the pan is placed over high heat.
Grilled Pineapple for Dessert
This is an easy dessert that anyone can make using simple ingredients. All you need is some pineapple rings, slices, or chunks – whichever you
prefer, and some brown sugar.
Place the pineapple pieces on the barbecue grills. Cook for a few minutes on each side.
You can check if it is cooked enough if there are light grill marks on the flesh. You only want to make the fruit juicy and warm, not
charred.
When it is done, assemble the fruit on a serving plate and sprinkle with sugar. Ready for another BBQ session.
